Huatulco is a "tourist zone" in a small town kind of place with two or three communities in close proximity. It has bars, dancing, etc. but in much smaller places and quentities. It is not a party place but a place for families, honeymooners, and just plain people wanting to slow down a lot. Of course, snorkelling and diving is nice, but it is the Pacific Ocean, although Huatulco has many nice bays and beaches with few to no footprints.

Spend a lot of time on beaches. You can visit many different beaches by TAXI and by boat. Take water, sunscreen, towels, and some coin pesos with you.
Visit mountain streams and pools.
