I'm not ready to make the switch or anything crazy like that, but I'm interested in cutting down on the amount of meat and fat in my diet.

READ IT ALL.

Good veggies:
- Carrots
- Cauliflower
- Broccoli
- Cucumber
- Pepper (bell)
- Potato (boiled not fried)

Best suggestion: make a stew.

Good fruits:
- Apple (good snack)
- Peach (good snack)
- Grape (may induce bowel movements)
- Tomato (put it in that stew)
- Strawberry (tasty!)
- Raspberry (tasty!)
- Banana
- Apricots (very easy to eat)
- Oranges (vital)

Eat these raw.

Personally, I like Quorn as an alternative to meat so now and then.

... do you not like nuts?

I always had the idea that nuts and beans were high in proteins. I can understand asking for recipies, but honest to Zeus, mixed nuts seem like a thing pretty much anyone can enjoy if they need protein.

Yeah, I like nuts.

Not sure I would sit down to a meal of mixed nuts though.  Was hoping there were some good vegetarian dishes out there I could try that were high in protein and low in fat.

I'm going to make some vegetarian 3 bean chili on my day off this week.

Yeah, that's a good idea.  I've been eating mostly chicken breasts and pork tenderloin because they are so low in fat, but I'd like to eat a few vegetarian meals a week as well.  I plan to live forever.

There was this man in the UK that tries to live longer by taking a low calorie diet.

I'd rather live less long and have more fun. Quality over quantity. But a vegetarian meal so now and then adds to the diversity of ones diet and therefore to the quality of ones life.

And don't forget to eat fish at least two times a week. Preferably fatty fish as they contain the healthy kind of fat.

VT-R, I hope your experiment with vegetariansm is going well.

I use legumes, eggs and cheese in my diet for protien. There are a zillion ways to use legumes from soup base to dough. The Vegetarian Epicurean Delight Cookbook is a great resource for some creative recipes.

Spinach lasagne -- with ordinary lasagne noodles and ordinary (vegetarian) spaghetti sauce, and filling of low-fat Ricotta cheese with chopped cooked spinach and a little Parmesan cheese, and the dish topped with low-fat Mozzarella cheese. If you mix in some ground Nutmeg with the Ricotta cheese to be used in the filling, the taste is a little suggestive of meat. My experience has been that carnivores like it.
